Start with eight fresh, large beets. Give them a thorough scrub to clean off any dirt. Cut off the tops, but remember to leave approximately one inch of the stems attached; this little trick helps the beets retain their gorgeous red hue. Place them in a big pot and cover with water. Bring the water to a rolling boil, then lower the heat to let the beets simmer with the lid on. Cook them until they are fork-tender, which usually takes about half an hour.
Remove the cooked beets from the pot and set them aside to cool. Once they have cooled, the skins will peel off with minimal effort—often just by rubbing them. Slice the peeled beets and put the slices into a large bowl. Next, you will make the spiced brine. In a medium saucepan, mix together one cup of vinegar, half a cup of sugar, one and a half teaspoons of whole cloves, the same amount of whole allspice, and half a teaspoon of salt.
Put the saucepan on the stove and turn the heat to medium. Heat the mixture, stirring occasionally, until it comes to a boil and the sugar granules have completely disappeared.
