Hospice chef reveals the one comfort food most people ask for before they die

At a hospice in Oxfordshire, chef Spencer Richards ensures that those who are approaching the end of their lives receive meals made with great care and affection.

For him, cooking for patients with terminal illnesses is not merely a job; it is a true calling.

In an interview with the Mirror, chef Richards expressed that there is no greater honor than enhancing the final days of patients with his comforting dishes.

“As a chef, I believe there is no greater honor than preparing someone’s last meal. Recently, I had a 21-year-old patient who didn’t find anything appealing on the standard menu. Being young, he wasn’t fond of the usual choices, so we had a conversation and discovered he enjoyed street food, and we made that happen for him,” he shared with the publication.

He remembered baking a birthday cake for a 93-year-old patient who had lived her whole life in a traditional home where birthday celebrations were rare.

“When we surprised her with it, she was brought to tears. She was truly overjoyed.”

In fact, a birthday cake is the most requested item by patients at Sobell House Hospice as they approach the end of their lives.
“These may seem like small gestures, but for those who have experienced isolation or loneliness, they hold significant meaning,” chef Richards remarked.

Additionally, he mentioned that modifying the meals he creates is crucial because many patients in palliative care lose their ability to swallow. Their taste preferences also shift, influenced by the medications and treatments they undergo.

One observation this hospice chef has made is that cancer patients often develop a craving for sweets.
Moreover, many patients have heightened sensitivity to salt.

“Food is an incredibly emotional medium – it can evoke childhood memories and help forge new, lasting ones. That’s our mission here.”
